Mango, Avocado & Halloumi Salad with Sumac Lime Dressing

Ingredients
  

  • 1 (5 oz) bag arugula Italian mix
  • 1 ripe mango thinly sliced
  • 1 large avocado thinly sliced
  • 7-8 oz halloumi cheese sliced or cubed
  • olive oil for cooking halloumi
  • 2 scallions thinly sliced
  • handful fresh tarragon roughly chopped
  • flake salt

For the Sumac Lime Dressing

  • 1 lime zested and juiced
  • 2 tsp honey
  • 1 tsp sumac
  • kosher salt
  • 3 tbsp olive oil

Instructions
 

  • Heat a drizzle of olive oil in a skillet over medium heat. Add the halloumi and cook for 2–3 minutes per side until golden and crispy. Set aside on a paper towel lined plate.
  • In a small bowl, whisk together the lime juice, lime zest, olive oil, honey, sumac, and salt until smooth.
  • Add the arugula mix to a large serving bowl. Top with the mango, avocado, scallions, tarragon, and crispy halloumi.
  • Drizzle the dressing over the salad just before serving and toss gently to combine. Finish with a sprinkle of flaky salt if desired.
