Mango, Avocado & Halloumi Salad with Sumac Lime Dressing
This vibrant salad is the perfect balance of sweet, salty, creamy, and bright. Peppery greens are tossed with juicy mango, creamy avocado, crispy halloumi, fresh herbs, and a zesty sumac lime dressing that tastes like sunshine in every bite. Perfect for Shavuot or any warm-weather gathering.

- 1 (5 oz) bag arugula Italian mix
- 1 ripe mango thinly sliced
- 1 large avocado thinly sliced
- 7-8 oz halloumi cheese sliced or cubed
- olive oil for cooking halloumi
- 2 scallions thinly sliced
- handful fresh tarragon roughly chopped
- flake salt
For the Sumac Lime Dressing
- 1 lime zested and juiced
- 2 tsp honey
- 1 tsp sumac
- kosher salt
- 3 tbsp olive oil
Heat a drizzle of olive oil in a skillet over medium heat. Add the halloumi and cook for 2–3 minutes per side until golden and crispy. Set aside on a paper towel lined plate.
In a small bowl, whisk together the lime juice, lime zest, olive oil, honey, sumac, and salt until smooth.
Add the arugula mix to a large serving bowl. Top with the mango, avocado, scallions, tarragon, and crispy halloumi.
Drizzle the dressing over the salad just before serving and toss gently to combine. Finish with a sprinkle of flaky salt if desired.
