I made this Mango, Avocado & Halloumi Salad while thinking about the kinds of dishes I always crave around Shavuot: vibrant, fresh, colorful food that feels abundant and celebratory without requiring hours in the kitchen. Mango, Avocado & Halloumi Salad with Sumac Lime Dressing
Ingredients
- 1 (5 oz) bag arugula Italian mix
- 1 ripe mango thinly sliced
- 1 large avocado thinly sliced
- 7-8 oz halloumi cheese sliced or cubed
- olive oil for cooking halloumi
- 2 scallions thinly sliced
- handful fresh tarragon roughly chopped
- flake salt
For the Sumac Lime Dressing
- 1 lime zested and juiced
- 2 tsp honey
- 1 tsp sumac
- kosher salt
- 3 tbsp olive oil
Instructions
- Heat a drizzle of olive oil in a skillet over medium heat. Add the halloumi and cook for 2–3 minutes per side until golden and crispy. Set aside on a paper towel lined plate.
- In a small bowl, whisk together the lime juice, lime zest, olive oil, honey, sumac, and salt until smooth.
- Add the arugula mix to a large serving bowl. Top with the mango, avocado, scallions, tarragon, and crispy halloumi.
- Drizzle the dressing over the salad just before serving and toss gently to combine. Finish with a sprinkle of flaky salt if desired.
