If you grew up going to Middle Eastern parties, there’s a good chance you remember seeing trays of brightly colored jello somewhere on the dessert table. Between the endless platters of food, tiny cups of tea, bowls of nuts and seeds, and tables overflowing with pastries and fruit, there was almost always a cold, refreshing dessert waiting in the fridge.
My grandmother makes this pomegranate jello for almost every party she hosts, and it’s always one of the first desserts to disappear. Kids love it, adults love it, and somehow there’s always someone going back for a second serving.
Made with pomegranate juice and topped with fresh pomegranate arils, it’s simple, beautiful, and incredibly refreshing after a big meal. The sweet-tart flavor of pomegranate works perfectly here, and those jewel-like arils on top make it feel just a little extra special.
