And when the strawberries are especially good, like Harry’s Berries good, I honestly don’t think they need much. Just a little sugar, some vanilla bean, lemon zest, and buttery pastry to hold everything together.
This Strawberry Vanilla Bean Puff Pastry Galette is exactly the kind of dessert I love making when I want something that feels beautiful and impressive without spending all day in the kitchen. The puff pastry gets deeply golden and flaky, the strawberries turn jammy and glossy, and the turbinado sugar around the edges gives the perfect crunch.
I also love that galettes are meant to feel rustic. There’s no pressure to make it perfect, which somehow makes it even prettier to me. It’s casual, unfussy, and exactly the kind of dessert I want to bring to a dinner party or serve after a long summer meal.

Strawberry Vanilla Bean Puff Pastry Galette
Ingredients
- 1 sheet puff pastry thawed
- 1 lb fresh strawberries (about 3 cups sliced) hulled and sliced
- ¼ cup granulated sugar
- 1 tsp vanilla bean paste
- 1 tbsp cornstarch
- zest of 1 lemon
- juice of half a lemon
- 1 egg beaten for egg wash
- turbinado sugar for sprinkling
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a medium bowl, combine the sliced strawberries, sugar, vanilla bean paste, cornstarch, lemon zest, and lemon juice. Toss gently and let sit for about 10 minutes while you prepare the pastry.
- Roll out the puff pastry slightly on the prepared baking sheet. Use a knife to score a 1 in border on all sides of the pastry dough.
- Spoon the strawberry mixture into the center of the pastry. You can adjust the strawberries so that they lay in pleated straight lines, or just leave it rustic.
- Brush the edges with egg wash and generously sprinkle with turbinado sugar.
- Bake for 25–30 minutes, or until the pastry is deeply golden and puffed and the strawberries are bubbling.
- Let cool slightly before serving. Best enjoyed warm on its own or with vanilla ice cream or whipped cream.
