Ingredients
- 2 large fennel bulbs outer layer removed, cut in half and thinly shaved through the core. (Reserve a few fennel fronda

- 2 oranges segmented
- 2 grapefruits segmented
- 1 lime juiced
- 1 cup pomegranate arils
- 1-2 tbsp olive oil
- flaky salt
Instructions
- Arrange shaved fennel on a low bowl or platter, season generously with salt and toss. Carefully arrange orange and grapefruit segments on top in an artful way.
- Dress with the juice of one lime and olive oil.
- Top with pomegranate arils and reserved fennel fronds. Sprinkle with flakey salt and serve immediately.
