Ingredients
  

  • 2 large fennel bulbs outer layer removed, cut in half and thinly shaved through the core. (Reserve a few fennel fronda
  • kosher salt
  • 2 oranges segmented
  • 2 grapefruits segmented
  • 1 lime juiced
  • 1 cup pomegranate arils
  • 1-2 tbsp olive oil
  • flaky salt

Instructions
 

  • Arrange shaved fennel on a low bowl or platter, season generously with salt and toss. Carefully arrange orange and grapefruit segments on top in an artful way.
  • Dress with the juice of one lime and olive oil.
  • Top with pomegranate arils and reserved fennel fronds. Sprinkle with flakey salt and serve immediately.
