Citrus Arugula Salad with Lemon Ginger Vinaigrette

Ingredients
Lemon Ginger Vinaigrette
- ¼ cup extra-virgin olive oil
- ¼ cup fresh lemon juice
- 1 tsp freshly grated ginger
- 1 tsp honey
- ¼ tsp ground turmeric
- kosher salt
- fresh cracked pepper as desired
Citrus Arugula Salad
- 4-5 cups baby arugula
- 2 Cara Cara oranges peeled and sliced
- 2 avocados sliced
- ¼ cup pomegranate arils
- ¼ cup sliced almonds
- 2 tbsps fresh mint leaves chiffonade
- flake salt
Instructions
- Make the vinaigrette: In a small bowl or jar, add the lemon juice, olive oil, ginger, honey, turmeric, salt, and pepper. shake or whisk until emulsified. Taste and adjust seasoning as needed.
- Arrange the arugula on a serving platter or in a large bowl. Layer the Cara Cara oranges, avocado, pomegranate arils, sliced almonds, and fresh mint on top.
- Drizzle the lemon ginger vinaigrette over the salad just before serving. Toss gently or leave layered for presentation. Serve immediately.
