Citrus Arugula Salad with Lemon Ginger Vinaigrette

A bright, citrusy arugula salad with Cara Cara oranges, avocado, pomegranate, and fresh mint, tossed in a zesty lemon ginger vinaigrette.

Ingredients
  

Lemon Ginger Vinaigrette

  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tsp freshly grated ginger
  • 1 tsp honey
  • ¼ tsp ground turmeric
  • kosher salt
  • fresh cracked pepper as desired

Citrus Arugula Salad

  • 4-5 cups baby arugula
  • 2 Cara Cara oranges peeled and sliced
  • 2 avocados sliced
  • ¼ cup pomegranate arils
  • ¼ cup sliced almonds
  • 2 tbsps fresh mint leaves chiffonade
  • flake salt

Instructions
 

  • Make the vinaigrette: In a small bowl or jar, add the lemon juice, olive oil, ginger, honey, turmeric, salt, and pepper. shake or whisk until emulsified. Taste and adjust seasoning as needed.
  • Arrange the arugula on a serving platter or in a large bowl. Layer the Cara Cara oranges, avocado, pomegranate arils, sliced almonds, and fresh mint on top.
  • Drizzle the lemon ginger vinaigrette over the salad just before serving. Toss gently or leave layered for presentation. Serve immediately.
