Ingredients
  

  • avocado
  • 2 tbsp cilantro finely chopped
  • 1 scallion thinly sliced
  • 1 tsp lime juice
  • salt
  • 1 serrano pepper thinly sliced (optional)
  • 3 large eggs
  • 1 tsp olive oil
  • 1/4 cup broccoli chopped into small, ½ inch pieces
  • 1/4 cup cheddar cheese grated
  • 1 8-inch sprouted whole grain tortilla I like Ezekiel brand

Instructions
 

  • In a bowl, mash avocado, add in cilantro, scallion, lime juice and salt. Set aside.
  • In a small bowl, whisk together 3 eggs with a pinch of salt. Set aside.
  • In a non-stick skillet on medium heat, add olive oil along with broccoli and cook for about 2 minutes. Sprinkle with cheddar and use a spatula to mix around the pan. Turn heat to medium-low and pour in whisked eggs. As soon as eggs begin to set (less than a minute), move them around the pan with a spatula and turn off the heat. You do not want overcooked eggs!
  • Lay your tortilla on a plate, add egg mixture and as much avocado mixture as desired. Fold sides in and roll into a burrito. Heat your pan again to medium heat and crisp up the burrito for about 30 seconds per side. Remove from heat and enjoy!
