There’s something about flaky puff pastry and savory mushrooms that just feels like fall. Easy Mushroom Borekas (Flaky Puff Pastry Hand Pies)
These savory Mushroom Borekas are made with a mix of golden sautéed mushrooms, onions, and spices folded into flaky puff pastry. A touch of mashed potato binds the filling, creating the perfect handheld appetizer, warm, cozy, and ideal for entertaining or a girls’ night in.
Ingredients
- 1 cup mashed potatoes (can be made from a boiling a small potato or from instant)
- 15 oz various mushrooms I used trumpet, shiitake and cremini, cut into small 1/2 in pieces
- 2 tbsp olive oil
- kosher salt
- 1 small onion finely diced
- 2 cloves garlic minced
- ½ tsp curry powder
- ½ tsp cinnamon
- 1 package puff pastry squares thawed in the fridge and cut in half
- 1 egg
- sesame seeds
- flaky salt
Instructions
- Prepare your mashed potatoes and set aside.
- Heat a skillet to medium heat. Add mushrooms in batches making sure not to overcrowd the pan. Do not move them. Wait a couple of minutes until you hear a sizzling sound, drizzle with a little olive oil, wait a beat and then move them around a couple of times. Your goal is to get a nice golden color, not soggy grey mushrooms! Remove from the heat and repeat process with remainder of the mushrooms. Season mushrooms with salt when they are off the heat.
- In the same pan over medium-low heat, add 1 tbsp of olive oil and saute onions about 8 minutes. Add in garlic, curry and cinnamon and continue to cook until fragrant, about 3 minutes. Deglaze the pan with a few drops of water and use your spatula to pick up the flavorful brown bits that are stick to the pan. Remove from the heat and mix with mushrooms and mashed potatoes. Check seasoning.
- Preheat oven to 385°. Spoon a heaping tablespoon into half a puff pastry square, fold over and crimp all the edges. Lay the borekas onto a parchment lined baking sheet. Crack the egg into a bowl and whisk with a sprinkle of salt to make an egg wash. Brush the egg over the borekas, sprinkle with flaky salt and sesame seeds and bake for 35-40 minutes until golden brown. Let cool before digging in.
