Banana Waffles
Start your day right with these fluffy Banana Waffles! Made with wholesome whole wheat and almond flour, and naturally sweetened with ripe bananas—no added sugar needed! Easy, nutritious, and irresistibly delicious, they'll become your new breakfast favorite!
Equipment
- waffle iron
Ingredients
- 2 bananas the riper, the better
- 1/4 cup coconut oil softened
- 2 cups milk
- 6 eggs
- 1 tbsp vanilla extract
- 1 tbsp baking powder
- 1/4 tsp kosher salt
- 1 tbsp cinnamon
- 1 cup whole wheat flour
- 1 cup almond flour
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your waffle iron. I like mine on 2 for crunch, and 5 for darkness. But use what your family prefers.
- Add all of your ingredients to the bowl of a blender and mix until fully incorporated. (Alternatively, you can make this mix in a bowl. For best results, be sure to mash your bananas and coconut oil together first before adding the rest of the wet ingredients, followed by the dry ingredients.)
- Pour about one and a quarter cup of batter into the waffle iron and allow the machine to work it's magic. Work in batches until the batter is used up.
- Eat your waffles while they are nice and hot. I let the leftovers cool completely and save them in the freezer for quick weekday breakfast.
