Easy Sheet Pan Cauliflower with Onions and Dates

Ingredients
- 1 large head of cauliflower cut into florets
- 1 red onion halved and cut into ½ in pieces
- 6 Medjool dates cut in half, deseeded and thinly sliced
- 3 tbsp olive oil
- 1/2 tsp cumin
- 1 tsp honey
- salt
Instructions
- Preheat the oven to 400°. On a sheet tray, toss together cauliflower, red onion, and dates. Drizzle with olive oil, cumin, honey and season generously with salt. Mix well so that the oil and seasoning generously coats each floret.
- Roast in the oven for 30-45 minutes, tossing every 20 minutes so that they vegetables cook evenly. Remove from the oven and serve immediately. This dish even tastes good as a cold leftover, but there won't be any left.
