Fresh & Simple Herbalicious Cabbage Salad
This herby cabbage salad proves you don’t need a long ingredient list for big flavor. Just crisp cabbage, fresh herbs and a few pantry staples—fresh, vibrant, and ready in minutes!
Ingredients
- 1/4 head cabbage (about 5 cups)
- 4 sprigs fresh mint
- 4 sprigs tarragon (any herb or mix of herbs you like will work well)
- 2 spring onions
Dressing
- 1/4 cup good olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp lime juice
- salt
Instructions
- Thinly chop cabbage and place in a bowl with chopped herbs.
- Whisk together dressing ingredients in a small bowl. Pour over cabbage mixture and toss well.
- *The nice thing about this salad is that it is endlessly adaptable. Any herb can be swapped out, and citrus can be swapped in, any vinegar can be replaced. It's fully customizable to your tastes. The main idea is to mix different acids together for a fuller, more nuanced viniagrette.
