Spicy-Sweet Broccoli Salad with Mango & Creamy Cashew Dressing
Ingredients
Salad
- 5 cups broccoli cut into small florets
- 1 mango cubed
- 1/4 red onion thinly sliced
- 2 tbsp toasted sliced almonds
- 1 tbsp dried currants
Dressing
- 1/2 cup raw cashews
- 3 cloves garlic
- 1 jalapeno pepper
- 2 tbsp rice wine vinegar
- 2 tbsp soy sauce
- 1 tbsp coconut sugar
- 1/2 tsp sesame oil
- 1/2 lime juiced
Instructions
- Bring 1 1/2 cups of water to a boil in a large pot. Turn down to a simmer, add broccoli and cover the pot. Steam for 3 minutes. Uncover and drain the broccoli. Lay on a towel to cool 10 minutes while you make the dressing.
- In a small blended or food processor, mix together all the dressing ingredients until you reach a smooth pourable consistency. If the mixture is too firm to pour, slowly add water one tablespoon at a time until the desired consistency is reached.
- On a large plate, layer broccoli, mango cubes and thin slices of red onion. Spoon the dressing over the salad. Top with crunchy almond slices and dried currants. Serve and enjoy!
