Ingredients
  

  • 2 cups watermelon cut into ½ inch cubes
  • 1 large heirloom tomato cut into ½ inch cubes
  • 2 Persian cucumbers cut into ½ inch cubes
  • 1 large avocado cut into ½ inch cubes
  • 1 serrano pepper thinly sliced
  • 1 green onion thinly sliced
  • 1/4 cup mint roughly chopped
  • 1/4 cup tarragon roughly chopped
  • 1/4 cup lemon juice freshly squeezed
  • 1 tsp balsamic vinegar
  • kosher salt
  • Maldon salt

Instructions
 

  • In a large bowl, add watermelon, heirloom tomato, cucumber, avocado, serrano, green onion, mint and tarragon. Drizzle with lemon juice and balsamic vinegar. Season generously with kosher salt and Maldon. Serve immediately.
