Easy Summer Salad with Tahini Dressing and Fresh Peaches

Tahini Dressing
- 6 tbsp olive oil
- 3 tbsp tahini
- 3 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1 tsp honey
- 1 tsp dijon mustard
- 1 garlic clove grated on a microplane
- 1/2 tsp dried mint
- kosher salt
Salad
- 2 heads little gem lettuce leaves separated and washed
- 2 Persian cucumbers cut thinly on a bias
- 2 haas avocados sliced lengthwise 1/4 inch thick
- 1 large peach sliced into 1/4 inch thick pieces
- 2 medium watermelon radishes thinly sliced
- 2 green onions thinly sliced
- 2 tbsp toasted almonds
Mix together dressing ingredients in a jar until well combined.
Arrange vegetables together in an artful way. Star with little gems, then tuck other vegetables around to form what resembles a bouquet of veggies. Top with green onions and toasted almonds. Drizzle with tahini dressing.
