Creamy Homemade Hummus Recipe with Tahini, Garbanzo Beans & Fresh Parsley

This easy, creamy homemade hummus recipe is made with garbanzo beans, rich tahini, fresh lemon juice, and garlic, then garnished beautifully with a drizzle of tahini, extra chickpeas, and vibrant parsley. It's a quick, healthy Mediterranean dip perfect for snacking, spreading, or sharing!

Ingredients
  

  • 2 tsp baking soda divided
  • 1 cup dried garbanzo beans
  • 2/3 cup tahini paste
  • 1/3 cup lemon juice plus more to taste
  • 3 garlic cloves grated
  • 1/4 tsp cumin
  • 1 tsp kosher salt
  • 1/4 cup ice water plus ice cubes

Tahini Drizzle

  • 1/4 cup tahini paste
  • 2 tbsp lemon juice
  • 1 garlic clove grated
  • 3 tbsp ice water plus more as needed

Garnish

  • 1/4 cup canned garbanzo beans drained and rinsed
  • 2 tbsp chopped parsley
  • drizzle of olive oil
  • Maldon salt

Instructions
 

  • Place dried garbanzo beans and 1 tsp of baking soda in a large bowl, cover with 4 inches of cold water and soak overnight.
  • Drain and rinse the garbanzo beans well. Add beans and additional 1 tsp of baking soda to a pot, cover with at least 2 inches of water and bring to a boil. Turn the heat to a low simmer and skim off any foam that accumulates at the top. Let the beans simmer for about 45 minutes, until they are falling apart.
  • While the beans are cooking, add tahini, lemon juice, salt and cumin to the bowl of your blender and mix. The mixture will turn into a sticky, clumpy paste. Slowly add in ice water one tablespoon at a time, scraping down the sides of the bowl to ensure it's well incorporated.
  • Drain and rinse the garbanzo beans and add them to the blender. Blend until creamy about 5-10 minutes, cleaning the sides of the bowl with a spatula every few minutes. I like to add a few ice cubes to help the mixture get nice and creamy. Taste for salt and lemon and adjust according to your preference.

Tahini Drizzle

  • Make tahini drizzle by combining tahini paste, lemon juice, garlic and a pinch of salt in a bowl with a whisk. Once the mixture has hardened into a lumpy mess, add ice water and mix slowly until incorporated. The tahini should have a pourable consistency.

Plate Your Dish

  • Add hummus into a low, wide bowl. Use a spoon to swoosh it around and leave a pocket in the middle to pour tahini drizzle.
  • In a small bowl, mix together the canned garbanzo beans, a pinch of salt, a drizzle of olive oil and the chopped parsley.
  • Pour the tahini mixture into the hummus pocket, add garbanzo bean mixture on top. Drizzle more olive oil on top of the bowl, sprinkle on some Maldon salt and serve.
